    Yes it does...Also where are you sticking your probe? With Brisket you want to go more by the feel of your probe as its inserted into the meat.

    What to Smoke w/ Brisket?

    Chickens would be fine just make sure you put them on the bottom so the juices dont drip on your almost finished brisket. Chickens will take about 3hours at that temp. I dont eat the skin so a long smoke on the WSM is okay with me.

    J. Just cook a big pork loin you can do that I in about 1.3-2hrs. Cook to 150 let it rest slick and throw on a bun. then you can get sleep and your boys will still love the great BBQ.

    How long can pork butts sit in the refridge?

    4 butts in cryovac fridge temp is 35 degrees and they haven been in there since Sunday and will be cooked on Wed Night. I also have 6 whole chickens in bags I am thinking of freezing those since they wont be cooked until Friday morning or do you think I can leave them out?

    Scott, Yes I will use two WSM and that 250 sounds good to me. Yes they seem a little think on the flat side but he really did a nice job trimming them.
