    For those who have smoked a brisket on a 18 WSM.....

    I've cooked 17 pounders on mine. Just wedge the ends under the handles of the grate. It will shrink and fit the grill in a few hours. As for adding fuel, I cook as 275-300 and wrap when the brisket gets to 160 or has the right color. Never had to add fuel.

    I've always had good luck with brisket cooks but one time a few years ago I had a Choice brisket that came out awful. Cooked exactly like always. Guests were happy but I knew better. It happens.

    What is medium on a gasser ?

    The knobs are just a reference. For my Genesis, high is grease fire. Medium is 450-550. When I start with the knob at medium after warmup, very slight adjustments either way make big differences in temps. My advice is to cook by the temps on the lid thermometer and learn what knob positions...
