    I used to do this. Now I have a Classic Accessories cover - no water so far. It fits so tightly that I don't think a trash bag could fit under it.

    Keep it warm the same way you keep any other meat entree warm. The flat should be served sliced. If you're thinking about cubing it or chopping it, serve something else.

    Weber sold me the parts for $78 shipped. The new door is a big improvement over the old one. Added a Vortex Plate for the firebox and it's like having a new smoker.

    My son decided not to come home today so I bought a $10 grinder and a $1 wheel at Harbor Freight. Notching took about 30 seconds. Job looks VERY professional!:rolleyes:

    I was thinking about notching the top of the upper chamber or drilling a hole and putting in a grommet. Which do you prefer?

    Brisket Cooking Time

    I use the hot and fast method. Did a 14.5 lb packer a couple of weeks ago in 7 hours. Came out great. Lots of instructions and comments on the Internet.

    5 in GA? Cool! Still, VERY subjective. I've eaten at Fox Bros. and Fresh Air (The original one in Jackson) and both are good. Fresh Air is rated in the top 10 in the nation, ahead of Franklin's, but neither would be in my top 5 in GA. This from a Georgia native.
