    Flames through knob Genesis 330

That's news to me. I had water get into one of the valves and it froze and bent the stem 2 years ago. Weber would only sell me a manifold for $70. I kept the old one for parts but I'll look for a new valve now. How standard are they?

    Thawing/Brine Question

Thaw it in the brine! That's what I do. I cook a trash can turkey every year for a camping trip and all that's available is frozen birds. You usually can't get the giblet package out before it's thawed but that doesn't hurt anything.

    Flames through knob Genesis 330

The spindle that goes into the manifold is bent and allowing the gas to leak past the seals. There is no repairing that short of a new manifold. I absolutely would not use that grill. Even with the knob turned to "Off" there can still be leakage that will accumulate in the cabinet. When you...

Do they have nothing better to do

Possibly just the presence of the dogs will keep most people from doing something stupid.... Doesn't appear to have worked in this instance.

Brand Used Genesis Espresso e310- Question RE: Firebox Warranty

I believe Weber had a problem with those units and is replacing fireboxes from what I've read here. You might want to look up the warranty to see if that applies to the original purchaser only. I've got the same grill and have not been too impressed with the quality. Twice a year I have to...

Vasconia or IMUSA 32 qt Pot

Unfortunately the Vasconia pot seems to be permanently unobtanium. A batch of them became available last spring and I bought a bunch figuring the supply chain was being replenished. I'm guessing it was simply a left-over stash someone discovered because they were out of stock the following...

    Question About Stuffing/Curing Sausage

Cold is good. If you try to stuff warm mix you may have a problem with the fat separating out of the meat mix.

Questions about my own wood for smoking

Even in a burlap sack, the ones in the center aren't going to dry very fast. I'd just leave them out in the weather until fall/winter. A little rain or dew isn't going to affect them much and Chris even posted a few years back how little moisture there was in chunks that had soaked in water...

Questions about my own wood for smoking

I've never had a problem using freshly cut wood for smoking. The hot coals will dry it out as you cook. If you're planning on using it in an offset as a source of heat as well as smoke, you're going to want dry wood that will support combustion. To dry the chunks, sun and wind are your...

Thermoset table cleaning, what worked for me

Both should be in the cleaning section at your grocery store.

    Lasagna?

I would not use any water or wood. The charcoal will add a bit of smoke flavor and I would think that should suffice. When I camp, my kettle becomes my oven and I bake casseroles and even pecan rolls in it. Two years ago we were at a convention in PA with a 30 yr old pop up camper and no oven...

Using the cylinder in the cabinet?

The only concern I can see is if you have a leak and the cabinet fills up with propane. The chances of that happening are probably slim to none or the Weber attorneys would have put a warning in the manual.

Thermoset table cleaning, what worked for me

Bar Keepers Friend has always worked well for me. Washing soda also works well and is very inexpensive to boot.

    Rubber chicken

I cooked a few breasts this spring and one of them had a texture like it was made of rubbery tubes. The flavor was fine but the texture of that one completely ruined my appetite.
