Lid holder for Premium Kettle models?

Thank you Dave! Are those the only differences? Is it the same kettle and kettle internals?

Lid holder for Premium Kettle models?

I want the more transportable Premium kettle :blackkettle: but really love the idea of lid holder that only seems to come with the :greenperformer: Performer model. Is there any optional to get a lid holder on the Premium?

What's the deal with the Big Green Egg?

Everywhere I go (retail stores) I see BGE for sale, yet when I chat up local folks into doing their own smoking I find hardly nobody owns one (they almost all own a WSM!). I know there is a huge price difference but a lot of the folks I talk to seem to like barbecue enough that I think they...

Anybody try a pellet grill and regret it?

While researching pellet grills/smokers someone offered the following bit of advice: 'Don't get rid of your WSM' Well, after 2 days of using my new pellet grill I'm ready to sell it for scrap and buy the 22" WSM I should have bought. Maybe I'm just too used to the (delicious) flavor profile of...

Can I hold 300 - 325 on WSM with empty water pan?

Actually I did ok keeping temps generally between 310 - 325 with just normal vent usage. Now I know it can be done.

Can I hold 300 - 325 on WSM with empty water pan?

Well we've had no problem cruising 315-325. A little more fluctuation than when I hold around 250 but it's going ok. Earlier I ever so slightly cracked the lid with a wooden skewer but temps shot to 370, so don't do that. They dropped and I was able to get stable by adjusting down some vents...

Can I hold 300 - 325 on WSM with empty water pan?

Just started my brisket cook. Full chamber with full chimney dumped on top. Empty water pan. All vents open. Shot to 288 and just sitting there. Had hoped to pass 300 and close vents a little to level off and cruise. Temps dropping now, down to 280. Not sure the WSM wants to breathe enough to...

I'm attempting beef ribs for the first time

You want them from the plate, before they cut them into the short beef ribs they usually package up. You want a whole plate and cook them whole before slicing into individual bones.

Can I hold 300 - 325 on WSM with empty water pan?

I plan to do a hot and fast brisket cook tomorrow. My goal is to hold a steady temp somewhere 300 - 325. Last week I tried it with water in the water pan and was unable to sustain steady temps over 300. I had temp spikes as the water pan ran dry, then big temp drops as I added water to stop...

I'm attempting beef ribs for the first time

Do yourself a favor and cook these for sure! I love beef ribs as much as brisket. Here was my last beef rib cook (for a large plate of 4 ribs) on the WSM: On 10:30 AM / off 6:00 PM-ish (7.5 hours) to reach internal 203 degrees. Ran smoker 250 to 275; at higher end and a little above last 45...

Do newer WSM's have sections that lets rain enter?

I have a cover. It has rained a couple times while smoking and I wish the water entering could be avoided.

    Dry water pan question

Fred, when do you use water in the water pan?

Do newer WSM's have sections that lets rain enter?

I have an early model 18.5" WSM. The lid fits down into the rim of the midsection such that rain runs down the lid, into the midsection and down the inside of the smoker. I wonder why they didn't design the lid to fit over the midsection? I think the midsection also fits down inside the bottom...

    Brisket for beginners

I am glad you asked the brisket question as the answers have been insightful for me too. But on this notion of dryness and holding - I need some additional education. My uneducated (maybe 6 briskets under my belt) thoughts is that the sections of brisket that are marbled will be moist. Not all...

    Weber Charcoal - $12/bag at Lowe's

I do not know the hardwood. I just did a 12 hour brisket cook. Started with an almost-full chamber on my 18" WSM, and dumped a full chimney starter on top to form an overflowing chamber. After my 12 hour smoke I removed the brisket and closed off the vents. The next morning I still had 1/2 the...

What concerns should I have for a used WSM?

I agree on the cleanout burn. A full load of charcoal with no water pan should get into the 400+ range and run for hours. Mine ran all night that way. I washed it out with a hose first too.

    Brisket wrap or not?

I want to try wrapping. Which item on Amazon is the best to get? I see 2 widths with 18" being most frequent. I probably do 4 to 6 briskets a year although that is increasing...

What concerns should I have for a used WSM?

I've always passed on buying used cast iron cookwear because I've seen folks use old pots for melting lead for fishing weights and things like that. But I can't imagine too many activities where someone could re-purpose a WSM for someone to worry about. I would get it if I was comfortable with...
