Beam instead of JD for brine--is this okay?

Beam will work. Beam is Kentucky Bourbon. Jack is Tennessee Sour Mash. I understand that Jack meets all of the technical requirements to be called bourbon, EXCEPT that it is not produced in Kentucky - hence it is Tennessee Sour Mash - and it is also charcoal filtered - a step I am led to believe...

Will be driving to Weber kettle Mecca tonight

I sent the Mother Ship an email asking if they did plant tours - I was hoping to plan a pilgrimage - but alas (due in no small part, I'm sure, to other members of my profession - lawyers) they do not do tours. I guess I will have to make due with a tour at Jack Daniels' Distillery....... Pat

What's is on your Weber Christmas list?

Brian - I am hoping for a Weber wood burning fire pit - the grill garden needs something to keep it warm during the winter! Pat

What to do with these wood chips?

To my Red Wing, Minnesota friend - I have some of those and I use them to make lighter cubes. Take some paraffin wax and melt it. Take some wood chips and, using a mini-muffin pan, or one of the cardboard (not Styrofoam) egg cartons, fill each little mold/container about half to 2/3rd full of...

    differences in older ss performers.

Wondering if the "handles" that extend to the right hand side of the grill (in the photo) have been trimmed - perhaps to fit a certain location or cover or whatever...I've never seen one without the handles. Agreed that the lid holder / Slide aside is missing - just a few dollars from Weber. Pat

Your #1 Tip on getting the smoker smoking...

AJ - in my experience, its always easier to get the temps on a WSM up than back down if you overshoot it. Like Richard said, learn the Minion Method. A full chimney in charcoal in a WSM, without another chimney underneath it, is going to burn out quickly with the vents open (as you know) and...

    Cooking indirect on a Q100

Here is the roasting rack that will fit on the Q100: Weber Q100 Roasting Rack I have one of these but haven't used it yet. For my Q220, like George, I use a cooling rack from Dollar Tree. It has four small legs. I put foil on the grate then sit the rack on top of the foil. Phil Hartcher has...

    Big Green Egg

Welcome John! I'm a bi-lingual griller, too. I have Performers, Kettles, Genesis and Q's. I have a Kamado Joe, 2 Eggs and a Primo XL Oval. I'll try to help. There are somethings the BGE is just always going to do well - low and slow, grilling at nuclear temperatures, and pizzas for starters...

    Weber Genesis Jr.

I post this every 6 months or so in hopes somebody will see the post and have something: My friend in Michigan managed to pick up one of the grills on my Weber collection list - a Weber Genesis, jr. gas grill - a while back. I went to a local propane distributor and got a new regulator for the...

New Technique for Pizza on the Kettle

Nice! Were you able to get a crispy crust on the pie, or was it a softer crust? I've been doing Pizza on my Kamado Joe, but it would be great to set up a couple of Kettles so I could do more than one at a time and have all the pizzas ready at the same time. Pat

    Galley-Que on eBay

Yeah, how are they going to ship that thing? By Limo? Lear Jet? Wow! Nice looking grill though. I think that may be one of those deals where the sales price is low, but the shipping is way inflated so the seller doesn't have to pay ebay fees on the full sales price of the item to the buyer...

Learned a valuable lesson this weekend!

I often use a salt-free "Mrs. Dash" seasoning on my brined birds, but with parts - and butterflied birds qualify here, I think, I more often give them a good soak in Mojo and then blot the liquid off of the outside of the bird before I apply my rub (Weber Kickin' Chicken is my current favorite)...

    Painting a Q320 Lid

Thank you Phil - I decided to break down and buy a new lid from Weber. When it arrived, it was scratched and had a couple of paint bubbles. Another call to Weber got me a replacement ASAP. I may make the original lid my winter-time project but for now, I am up and cooking on my "newish" Q320...

    my new ga

I am like you George, but I have a couple that live comfortably in the basement - a Red Jumbo Joe and a Red Mastertouch - I just can't bring myself to cook on them - and a Yellow kettle from the 70's that I just like to look at. Everything else is in the "rotation!" Pat
