    Oiling a Steak

I just cook steaks as they come with no oil. Add a little pepper and onion flakes to hamburger but mix it in the meat and don't oil. Often (when I remember too) lightly oil the grill grates to help prevent sticking. I lightly oil pork and chicken before applying rub. Oil first because I feel...

    Maverick ET-73 for $32

Thanks guys, I'm okay for now that my Weber is back in action but this is useful information. I may want to consider whether to go with the ET-73 and use my existing non-digi guru eyelet or go with the ET-732 and add a 3/8" Cajun grommet or some other modification.

    Maverick ET-73 for $32

J, I've read where they aren't real accurate and don't hold up well. I have a thermapen and a digi and my weber is within a couple of degrees of them after a few minutes. I did a butt on Wednesday or Thursday (the day my Weber quit) and had both the weber and digi in the meat. Last time I...

First Smoke ever this weekend. Several Noob questions

James, In the few cases where I've cooked chicken (or turkey) with anything else I've put the chicken on the bottom grate for the reason you mentioned. Also, I don't mind if the chicken cooks at a little higher temps. My bottom grate usually runs about 10 degrees higher than the top.

    Guru in the rain?

I bring my WSM into my covered and screened patio area when there's a chance of rain. I put the digi in a ziploc bag to avoid blow in. I sit the cooker up to where the fan is away from the rain.

    Maverick ET-73 for $32

J, The Weber worked great until it just stopped receiving a signal. It was right on with my digi probe. The problem is that it's only about 8 months old. The digi seems to be accurate but I like to have the remote so I can go inside.

    noob question about 18.5 wsm

Chris, Here is a good video on foiling the water pan. You don't have to foil but it helps with clean up. Also note that this is an older pan and your's is larger. http://www.youtube.com/watch?v...b2LMZsGU9mgAF6avdo6b

    Maverick ET-73 for $32

Thanks. I'm wondering if those 2 probes are the same. One is called a ET-73 Dual Probe and the other is a ET-73 Redicheck. Wonder what the difference is and whether the probes will fit through a bbqguru eyelet. The ET-732 apparently will not. I have two of those eyelets in my WSM. I run my...

    Maverick ET-73 for $32

Sounds like a good price. I wonder if the probes will fit through a guru eyelet? My Weber remote stopped working yesterday and I'm in the market.

Just got my wsm 18 today, whats my must haves?

Congratulations on your WSM. Other than charcoal and meat I don't think there are any "must haves," but a chimney and a remote thermometer are really nice.

New WSM owner, looking for advice on chicken

Chris, Here's the recipe I've followed on my past couple of chickens. I cooked at 325 temp at the grate, about 300 at lid. I don't remember exactly how long but somewhere around 2 1/2 to 3 hours. I quartered the chickens (2) and cooked the breasts/wings on the top grate and the thighs/legs...

temp control with no water in pan

I'd say the culprit was too many hot coals. Normally I start with about 8-12 hot coals and bottom vents open. When temp gets to around 220 and my target is 250 I close all the bottom vents completely. My digi damper is usually about 50% and my top vent are completely open. I overshot my...

    season your smoker

I wouldn't argue with Harry Soo but I just fired mine up and cooked. I cooked beer can chicken. I wanted something pretty fast and that could be cooked relatively hot. My goal was to learn something about temp control and get some decent chicken. Other than firing the pit too hot, things...

So when do you use a drip-pan on a kettle

Gary, Where do you pour the gunky water? (sink, trash, yard, neighbor's yard, ?) lol </div></BLOCKQUOTE> Justin, Sorry it took so long to reply. I didn't check the thread till today. Gunky water normally isn't too gunky but I just pour in out in my yard. No problems so far, but if it...
