    So where's the best place to take a temp reading on the wsm 22 . the top is not the place I changed out the thermometer on the top and now it's 75 to100 off. the stock one was 25to 50 off I'm thinking of putting a plug in there.     Get the 22 especially if you do ribs they lay better in the 22 and birsket will fit with out bending or cutting you will like the more room you have but that my 2 cents. it's what works best for you .but get the 22 you will enjoy

    I wouldn't not pre load the wsm if it's raining or foggy the birquets will take on moisture and will not burn right. The butts not a problem Start them at the same time when the smaller one is done wrap it in tin foil and put in a dry cooler it will stay hot for hours :wsm::kingsford::smokeyjoe:

    Big bad Beef short ribs

    Mac they did come in a cyro pack of 3 whole beef Plate ribs so 9 ribs total idid cut them down. Next time probably will cook them whole. In the picture that was 20.70 pounds of beef ribs i.payed 66 dollars for that pack I never have seen them that big hopefully that helps...

    So Joe I didn't have a big smoke ring used 2 pieces of pecan and one apple it needed more .I used salt and pepper it had a good taste but I would use some garlic onion and chill peppers next time
