Larry W's sticky in the Beef Recipes forum. I've done it a few times. It's excellent.

Holiday Bacon (with a bonus gift)

Ah, I didn't get/understand the Beswood reference. Ta. Still, those three slices he did by hand look immaculate.

Holiday Bacon (with a bonus gift)

Outstanding! (y) But I'm not buying you cut those slices by hand. It's perfect. My effort would resemble the hind-leg of a donkey! Is your meat-slicer "conveniently" out of shot? ;)

Interestingly terrible steak on the kettle

Au contraire. When I cook steaks, (prepped), they are always cooked straight from the fridge. I find it gives me some wiggle-room when getting your char game on. (I don't reverse sear). Once you have your desired char move it to indirect, & periodically check it with a meat therm until desired...

How much extra charcoal capacity does the Cajun Bandit charcoal ring provide?

Nearly exactly the same price, (goods + shipping). Mesh or laser-cut 3mm SS plate? Edit: When I bought mine it cost the same as the advertised item, and my dimensions were bigger. Good deal & grate service.

How much extra charcoal capacity does the Cajun Bandit charcoal ring provide?

I should have stated that it's available on Etsy (UK). I would think getting one shipped to the US would be bonkers expensive. Link.

Interestingly terrible steak on the kettle

Personally I'm not an exponant of the reverse sear method. YMMV. Ripping hot basket, vortex etc. A chilled steak straight from the fridge. Place over the coals and flip every minute to desired char on both sides. Move to indirect, stick a probe in and bring it up to 125IT. Rest. Eat. Edit...

How much extra charcoal capacity does the Cajun Bandit charcoal ring provide?

I too had issues getting a bigger coal-ring for the 14. But a bbq outfit in Italy, (Enrico Brandizzi's pals), made one for me out of SS mesh. I felt the mesh was a bit restrictive on the air-flow. So when I saw this company that would make a SS "firewood basket" to one's dimensions I jumped on...

How much extra charcoal capacity does the Cajun Bandit charcoal ring provide?

14.5" WSM. I also wanted a basket for extra capacity for long cooks, & a smaller grate to stop fuel falling through. I found this on Etsy. It's 3mm thick laser-cut SS, (not expanded metal), 7.5" deep, formed & welded to the same diameter as the stock fire-ring. It was less than half-price of the...

    Thanksgiving Racks of Pork

 I'm so grateful I have two high quality butchers within a 15 minute walk of my house, & one that is nationally famous for its quality & only a 15 minute drive away. All products are fresh and fully traceable.

    Pork Snorkers. (Sausages).

Kilties, (aka Pigs in Blankets, Kilted Soldiers), are the most popular traditional side dish to a roast turkey Xmas dinner, & that includes Yorkshire Pudding! Technically Pigs in Blankets are a small pork sausage encased in pastry, whereas the Kiltie is sausage wrapped in bacon. Pigs in...

    Pork Snorkers. (Sausages).

Moving on from the Gadgets forum where I posted that I had bought a manual meat grinder. Well, today was the initial test drive & first foray into sharkootery. We made, (let me re-phrase that. We attempted), to make snorkers, (sausages). Snorkers is a a Royal Navy term for sausages, also called...

    Wagyu Denver Steaks

I use this recipe. But I skip Step 2 and cook them in the air-fryer, 3-4 minutes. Not having to mess with heating up oil. Easy.
