What Do You Use The Top Vent For?

Sometimes if my temp "runs away" as it just did, I'll close down the top vent to recover. Put some smokewood on which caused this event.

    Horrible Smithfield ribs from Walmart--beware!!

My meat guy says that most cryopacked ribs are brined. You know they are brined when there is no blood present upon opening. I used to go for the grocery store $2.99/$2.77 sale ribs but no more. I choose to pay a little more and get fresh ribs from the neighborhood butcher. It really does make...

    Upgrading to Weber Kettle

I use a 2012 22.5" OTG (One Touch Gold) which is what Weber calls "Premium" now. It was $50 on Craigslist in very good condition. I like the better ash management system of the Gold or Premium. My favorite Performer is what's called "4th Generation" (the current model). It has the improved lid...

    Probes 22" WSM

At the end of the day, the slot mod is the easiest to use....no fishing cables and requires less planning. Here's how you can add a high temp grommet to an early WSM without punching the massive hole required for the Weber port. If you are careful, you can get two probes through a single...

    Considering switching to Master Touch

I have a 22" and wish I had a 26" sometimes. I use the baskets on almost every cook. Here is a typical set up with two pork loin backs... The center, under the ribs, is completely covered with aluminum foil. This forces airflow to the baskets and it also helps keep the center section clean...

    Beef short ribs

Looks yummy ! Malcolm's Memphis Ribs are my go-to for loin back ribs. His "The BBQ Rub" is hard to beat and is the Gold Standard in my experience.

    America AKA Budwesier... Weber

Definitely Chinese counterfeit. These have been showing up. The last one had a huge price tag on it......like 7 or 800.

Recommendations for degreasers / cleaners for kettles and wsm

Here's how I do my grates... http://tvwbb.com/showthread.php?52121-Soaking-Grates Spray with PAM (or equiv) when done including the coal grates. For everything else I use warm water with dish detergent. I used to use oven cleaner for some of it, but it it harsh and holy hell on...

    Stainless Steel Hardware

It's best to go to a "full service" hardware store where you can pick out the the needed hardware individually. This is not a thing of the past, they are around in every major city. Fastenal is going to want to sell you boxes of 50 or 100....that's a non-starter.

Jumbo Joe Carry Bag or Case

The only thing that I can think of is to buy a Weber 18.5" kettle cover and have someone handy with backpack/tent repair modify it to fit the JJ. I would buy the premium cover, IMO the standard cover is junk.

    Rehab beyond my skills?

That's a MBH (metal bowl handle). Riveted top handle (new ones are single screw) It's worth rescuing. There is enough there. Just have to do the right things. More info on the Kettle Club forum.

    Frame Repair for Weber Grills

Attitude on Weber Summit Charcoal Grill pricing

Weber will have to see "what the market will bear". In the case of WSM, that retail pricing is not being borne. One retailer, Walmart, is getting those slow movers off of their floors. My local hardware store rolls out the same WSM's year after year.

C B high flow charcoal ring

I don't have one, but the abundance of holes is probably so what air that is allowed in, can more evenly supply the charcoal. It is not like a house ridge vent-to-eave vent relationship where the two would be equal.
