What temp was your cooker? You said you wrapped at the end...foil, paper?
When you wrapped in a towel...did you literally put your brisket in a towel? Or was it still in foil/paper?
Average 12-15lbs on the 18WSM. I haven't personally seen a larger one around here.
I have also used the 26.75" with a snake to cook a smaller packer. I personally enjoy smoking on the WSM a little more, but the 26'er is sure up to the task.

I usually go for center cut St. Louis, but have been buying more loin back ribs lately to hone my process.
Beef Plate ribs are excellent but I only cook them 1-2 times per year.
Nice job. I don't usually make "red" posole anymore (wife prefers "green"), but like how you strained the mixture. That's a critical step.

The cold won't bother the WSM, but like Timothy says, be mindful of the wind.
I have had the wind mess with my temps on a 75 degree day, but have been rock steady on a calm 40 or 95 degree day.
Usually, shredded means "over." However, like others have said, too tender and a serrated knife will "shred" the meat.
Did you add broth to the foil when you wrapped? If not, add a cup or so along the side of the brisket and wrap.

Turkey is ok. I am doing 1-2 bone-in breasts this year on the WSM along with the standard hams. I was going to spin a bird, but everyone seems to prefer the master carve hams. My parents are the only ones who really, really like turkey.
I would think as long as you keep it in the fridge (and its #5 plastic), it would be just as fine as an opened apple juice container in the fridge.
#5 won't leech anything. #1 and #2 plastics could potentially over time, but chances are slim. Apple juice comes in plastic jugs. So does vinegar...
