    Well, I ended up at SoSF CostCo Business Center (because I needed a couple hundred pounds of flour), and they don't have any fresh seafood there. The racks of short ribs (USDA Choice) looked good and meaty, and the whole, lip-on Prime ribeye looked good too. I resisted. Unfortunately.

    Thanks, Michael. Separating the pork from the other solids after straining wasn't too big of a deal. I fished most of the pork out of the pot, then drained in my large colander (saving juices/fat, of course!) Then I just pick out the remaining piece from the onion, orange and pepper pieces...
