    Cool, we cook chuck roast in a crock pot occasionally, with onion gravy. Brisket actually is a poor man's meat anyway...... 3.49 a pound versus steak at $15 Unless of course you buy SRF, and even then you're only paying $10 a pound.

    Your local barbecue joint probably keeps it in a steam pan with finishing liquid. Which can be a diluted solution of chicken broth or bouillon and barbecue sauce. That's not personally something I want to replicate.

    Ive cooked 19.5 on my 18". Some of my shortest cooks were biggest briskets....9.5-11 hr. Go figure. Cook at 275, allow enough time. 2-6 hrs in cooler is fine.
