SRIRACHA hot sauce on butt roast?

I absolutely love sriracha hot sauce on about anything. I usually use mustard to help my spices stick, but I thought about substituting sriracha hot sauce this time. Anyone try this or see any possible issues other than heat?

Drilling a hole on lid of wsm to increase temps

I guess it is meant for low and slow. I do have a performer that I use for grilling, it's just not very convenient to add wood chunks or cook indirectly at temps in the low 300's for long periods of time. I'm almost kind of kicking myself now for installing the lid gasket. It's just so nice and...

Drilling a hole on lid of wsm to increase temps

Hi all, I have two wsm's. I have the gasket kit on both. Since installing the gaskets, Ive noticed my temps are much more stable especially at low temps, but it's definitely a lot harder to cruise at high temps. In fact with my lid on, my party q can't seem to get above 270 on either wsm. This...

Would you do one full pork butt or cut into halves?

Thanks everyone, I will definitely do two bone in halves. Can't wait till the weekend! It sounds stupid but I actually look forward to smoking meats. It can be time consuming, hot, messy, and tiring, but I just can't stop!

Would you do one full pork butt or cut into halves?

Hi, I'm going to do pulled pork this weekend. My first one was 3.5lbs and it tasted great. Smoked it for 4 hours and pulled it at 195 after 10 hours. My question is, would it be better to smoke a full size butt at 9 lbs or two 4.5 lb halves? It makes sense you would get more seasoning and bark...

Party Q for both my 14.5 and 22.5?

Ok so I cooked a slab of spare ribs on my 22.5 today using my new party q. It held 225 to 250 no problem, but struggled to go above 266 with water. I think the fan is just a little underpowered for 22.5. For the 14.5 though it's more than enough. Having said that, almost all my cooks /smokes...

    Strong Smoke Flavor

I don't like apple or cherry wood. To me the smoke flavor does have the ash tray effect. With chicken I always use hickory. For pork I always use oak. And for beef I use oak, hickory or mesquite depending on my mood. I learned the hard way to much smoke ruins the taste. So for all my smokes I...

Party Q for both my 14.5 and 22.5?

Ok, so I did my first test smoke on my 14.5 last night. WOW, the party q is amazing. It held the 225 for 6 hours and the battery meter still says 100%. Kind of questioning that though. It didn't run much, in fact barely at all. I checked the temp against my trusted Thermoworks DOT with the...

    Kettle with Smokenator and PartyQ

Oops, my mistake. I was thinking of the a-maze-n smoke tube. Never mind. Got mixed up.

    Kettle with Smokenator and PartyQ

Hey Nate, just wondering how come you use the smokenator instead of throwing chunks of wood directly on the coals? Is it more efficient or less of a hassle or? I've never tried the smokenator, but I have tried other smoke boxes with very poor results compared to chunks directly on the coals...

Party Q for both my 14.5 and 22.5?

Which vent hole did you choose to install the weber adapter on the 14.5? High or low? Does it blow dust around and which way did you point the vent?

Party Q for both my 14.5 and 22.5?

Okay, so I went ahead and pulled the plug on ordering a single party q for my WSM 14.5 and 22.5. I purchased an additional weber adapter and a couple plugs. I plan on drilling a hole to mount each, since I don't like the idea of taping the vents. I plan on doing several cooks on both wsm's and I...

Getting ready to hit the order button 18.5 or 22"

I currently own a 14.5 and 22.5. Had an 18.5 and sold it. I use my 14.5 90% of the time for my family of four and for camping with friends and my 22.5 for large get togethers. The 22.5 just uses to much charcoal for every weekend smokes. The 14.5 can cook so much more than I ever thought. I can...

HELP!! FRUSTRATED!! SMOKEY MOUNTAIN 18 and Heat Shield

I cook on my 14.5 with no heat shield. The 18.5 and 22.5 were real easy to install the heat shield though. I just put two legs on and then heat shield, then the third. Took maybe 15 - 30 seconds and 1 try each.

Cajun Bandit 20 Quart Water Pan For WSM22

That must be new, I check that site for cool stuff pretty often. I always use water as well and will purchase one. Thanks for letting us know. Also you don't have to add all 5 gallons in, but I would like to have the capacity for overnight cooks.

    Who uses 14" for camping??

I have a 14.5 for camping. Love it. I also thought about a making one, but I'm a water pan guy and wanted the access door.

Party Q for both my 14.5 and 22.5?

Ok so I did finally receive a call back from them and they explained everything. He said the new party q has a 6.5 cfm fan. He also told me some pretty good things about the digi q dx2 so now I'm kind of questioning my choice a bit. Most of my long cooks will be done at home, so maybe a unit...

Party Q for both my 14.5 and 22.5?

So I tried to call bbq guru today quite a few times throughout the day. I was hoping to get some info on their products. I tried both tech support and sales / customer service and left a message, but wasn't ever able to reach anyone. Now I'm kind of worried that bbq guru might have bad customer...

Party Q for both my 14.5 and 22.5?

Hi, I'm just about ready to buy a Party Q for both of my wsm's. I've kind of decided to go with the party q because it runs on batteries for my camping trips and I already have nice thermoworks thermometers for monitoring my meat temps. I have a 14.5 that I use for small meals and camping, and a...

feedback on first cook in my 14.5 temp was a touch low.

When I first got my 14.5 I treated it like my 22.5 and 18.5. It's a whole different animal. With my 18.5 I use a whole chimney of hot coals, so naturally For the first few cooks on the 14.5 I used about half that amount. I had all my vents wide open and could barely get 225. Then I decided to...
