That sounds like it was a lot of fun!

    Awesome 22" WSM Score!

Yeah, that's our third 22 and it is destined for a life on the back porch as a strictly home based unit. The other two 22s hit the road for contests along with a couple of 18s. I think I have ten 18s in various states of repair at the moment.

    Awesome 22" WSM Score!

I just picked up a brand new, sealed in the box, 22" WSM for the bargain basement price of...$199! It pays to be patient!

    Cost of Competing

Over our nearly 10 years of competing, we have estimated that our average cost per contest is right at $1000. This includes meat, entry fees, travel, lodging, charcoal and all other types of contest supplies. It does not include start up costs like tables, chairs, canopies, smokers, etc. It...

Anyone going to the Vista BBQ Classic - July 29 and 30, 2016?

Thanks again for the kind words, Mike! Alexa and I truly appreciate it! We got off to a shaky start at our first four events this year but the next four have been amazing with us going Reserve - Grand - Grand - Grand. We've had some really good streaks over the years but this one is the best...

Cleaning the inside of the center section and lid

You can get the flaking to come off with a sturdy wire brush. There's no need to remove anything more than that...unless you really want to. If that's the case, scrub it down with the brush to remove all the loose material and then give the interior a good coating of oven cleaner. This will...

Heavier duty grate for 22" kettles?

I agree that one of the weaknesses in the Weber Kettle grill line is the cooking grate. I'm sure it's a trade off between price and performance. I like a heavier grate for grilling as it has a very nice impact on the appearance of the food. I recently acquired a small set of Grill Grates and...

Looking for some good Rotissere ideas.

Pork loin is always a winner on a rotisserie. I recommend tying it with butcher's twine first, seasoning with your favorite pork rub and then cooking at about 300°F until you hit 145°F internal. Remove it from the cooker and let it rest for 20-30 minutes under a sheet of foil. Do not remove...

    Today at Costco

The Costco locations I frequent here in Phoenix have been carrying prime grade briskets for some time now, mostly in the 12-14 lb. range and usually from Excel, IBP or Swift. I've seen them as low as $2.99/lb. and as high as $3.69/lb. They're not what I would classify as "high prime" but I've...

    Competition Cooks

Mike, my better half, Alexa, and I have been competing since 2006 and the most honest answer I can give you is that you're only going to know what works by trying different things. That having been said, your first and most important skill to master is cooking the meat to the proper...

Bacon-wrapped Onion Rings with Sriracha Mayo Dipping Sauce

Very nice! Those are definitely on the appetizer list for the upcoming NFL season!

Rotisserie question, WSM , Cajun Bandit

You won't go wrong with the CB rotisserie ring, especially if you have both WSM and Kettle. The CB ring is much better than the Weber ring (which will only work on a Kettle).

Anyone going to the Vista BBQ Classic - July 29 and 30, 2016?

Thank you! We were all rookies at one time or another and I remember those early days with great fondness. We were in awe of more than a few teams back in those days and it inspired Alexa and me cook to the best of our ability. There was a lot less information available back then and it took...

Anyone going to the Vista BBQ Classic - July 29 and 30, 2016?

Thanks for stopping by our site in Del Mar, Bob, and for the kind words. We had a pretty good day at the races! Yes, we decided to make the trip back over for Vista so we'll likely see you there as well.

    2016 Del Mar Championship Report

It looks like you only toured the area were the vending teams were located. Twenty-six more teams, including ours, were in another lot located a bit west of where you were.

    Whats the difference in charcoal?

Throw caution to the wind and use a mixture of both. Put down a layer of Kingsford and then top it with a layer of Royal Oak. The bed of Kingsford should give you slow and steady ignition plus you'll get the flavor of lump charcoal too. It's a crazy world we live in!
