    What to do with rib trimmings?

    I only add enough liquid to keep meat from sticking to the pot and burning. half cup or less of water, stock, etc.

    I guess it was average size...about the size of a regular head of iceberg lettuce. plenty of liquid leaches out of the cabbage overnigt, so if anything go light on the vinegar and oil at first, then maybe add more later. side note, it is better with a green bell pepper than a red one.

    Cook them in a crock pot with some garlic/onion powder, pepper and cumin. Pull and shred the meat from the bones. Use a little oil in a cast iron skillet and some corn tortillas to make pork tacos.

    Most of the whole briskets I find are also 10-12 lbs. Like Bob said, they are mostly flat without a big point section. High heat works well on them though.
