    I bought 2 plugs to plug up my vent I use my party Q. I ordered them from home depot so picking them up at the store tonight. I went with the 3/4 nickel plated steel. I hope the 3/4 size fits the 18.5 as well!

    Bob, After you cure the belly you take belly out, run under cool water from faucet and run. Then you soak the belly? Would you guess you soak for 10 minutes at a time? 10 minutes and then change water. Soak again for 10 minutes? How many time do you do that?

    If I have this correct chuck ribs come from the bottom of the ribs near the brisket. The plate ribs come from the other side of the ribs near where you get your ribeye steaks.     I agree with Chris. I use water on long cooks to keep a moist cooking environment and believe it helps the meat absorb smoke and increase smoke ring.

    chicken and sausage are great starters. My advice to any beginners with WSM is to do a shorter cook with cheap meat! I wouldn't recommend a 16 hour brisket cook day 1!
