Interesting thread.
My 26 3/4" OTG has a bolt on handle with the heat shield, it's very solid. I modded it with a second one, which makes the bigger lid much easier to manouver.

I marinade them in Good Seasons Italian dressing mix and water, for a few hours (overnight is better). I cook them very similar to how "Clint" does, hot indirect. When they are done, put on your favorite sauce!

I originally got a 18 1/2" WSM, I got the 22 1/2" model a year later. Though I use both of them, if I had to have just one, I'd have the 22 1/2" WSM. You never have enough room. :)

I always fill the charcoal ring up to the top. I light the fuel in three places with a high output propane torch. After the cook, just shut the vents and reuse what's left for the next cook.
I generally let the cooker temperature come up to near my target cook temperature before I put the food...
