    Thanks guys,was supposed to do the beer can thing but we drank all the beers the night before and didn't realize I had none until it CME time to prep,lol so to display my coolness and not panic in front of my guests I opted go spatchcock the birds,lol. Can't lose with potatoes on the side either

    Thanks Dave, I cooked them at 225* for about 6 hours and they were very tender, not falling off the bones but just right, these were probably the best ones I've done to date as far as tenderness..

    celebrated my wifes birthday today and she requested baby backs and so I obliged,temps today was sweet about 75* hardly any wind,digi Q dx2,18.5 wsm,no water,smoked @ 225*

    i just did some whole chickens on my 18.5 wsm no water at 325* but i did run my digi Q,im yet to do it without my digi Q,to be honest it tasted the same as when i do it on my kettle (to me),go for it and good luck

    like Tony said temp wise and keep in mind that cook time varies with pork butts because of their weight and give yourself enough time,better to have the butt done early than late

    not sure but i think they sell a stacker for the 18.5 wsm,i thought i saw it on cajun bandits site,i have a digi Q dx2 and i love it and would recommend it.i just recently did a butt over brisket over night in mid 30* weather (N.Y.) and the butt went 14 hours on one load with plenty of charcoal...
