    I have an 18.5" WSM with a 10CFM fan and a HM 4.0. My PID settings are: PID: B=4 P=3 I=0.005 D=5

    Barrel Servo or Roto Damper?

I just want to ask which damper would be a better match for my rig and do not want to stoke any more frustration. I have great respect for both Tom Kole and Ralph Trimble as long time mainstays of this forum and do not want to add any additional friction. I have been thinking of doing an...

Advice: fitting blower to large vent

Put a rectangle of sheet metal inside the vents and drill two large but not too large holes (one for each vent) for the toggle bolts. The holes should be small enough so the toggle bolts work and large enough so you get good air flow. Tighten everything down so it will hold together by friction.

VPN for HM's behind a NAT

I understand that you have a potentially changeable DHCP allocated IP Address from your ISP, but is that IP Address a public one or private one? You can tell the difference by reading here. If its a public IP Address, you can use Dynamic DNS (DDNS) to create a domain name that always resolves to...

VPN for HM's behind a NAT

I use port 8022 to my router when I want to SSH to the HM and have the router forward that traffic to port 22 on the HM (note the HM has a static IP address on my internal LAN). I also setup an encrypted tunnel through SSH so I can get to the HM web page. With SSH connected to the HM, all I have...

HeaterMeter on the Raspberry Pi 2 Model B

Just saw the announcement on Slashdot. One more reason to bite the bullet (not to in any way to underestimate the serious pain for all involved) and migrate off of OpenWRT and move to a natively supported o/s like Raspian, ...

Calculating Humidity / insert new graph on HM homepage

Interesting discussion on maintaining humidity in a smoker. Bottom line: Humidity matters. It is REALLY HARD to maintain high humidity levels in an oven or smoker without extreme effort. Most methods you read about on the web or in recipes are malarkey. Water is very hard to convert into...

Has anyone mounted a HeaterMeter to an offset smoker?

First bootup no WIFI - need Help

Were you able to sign in via SSH (I use the putty client) and see what is in the /etc/config/network file? If you could post that, it would help.

First bootup no WIFI - need Help

Using the SSH command line interpreter, I would change the following file to: # cat /etc/config/network config interface 'loopback' option ifname 'lo' option proto 'static' option ipaddr '127.0.0.1' option netmask '255.0.0.0' config interface 'fallback'...

    Help with Smoke Duration

On further thought I feel that using an ATC over manually adjusting the dampers to maintain a temperature is similar to the gas mileage you get maintaining a specific speed in your car either on cruise control or by manually adjusting your foot on the accelerator pedal. Its obvious that you will...

    Help with Smoke Duration

I use a ATC (Automatic Temperature Controller) and foil over and never fill the water pan - its the HeaterMeter that is discussed in another forum on this site. With the HeaterMeter, air to the fire is efficiently controlled keeping the pit temperature withing 1-2F of the setpoint. On my 18.5"...

    Dry Brine??

I am thinking of doing the same thing and have never done it before. I would be interested in comments from folks that have tried dry brining. Here are some of the methods I am considering. NY Times 12- to 16-pound turkey, preferably a heritage or pasture raised bird 1/2 cup kosher salt...

Restaurant Depot Requiring Purchase Every 40 Days

I guess it depends on what other options are available to you. Living in Dallas, I would expect that there would be several other options. Here in the San Francisco Bay Area, finding a quality choice packer brisket at a reasonable price can be a challenge. Finding a prime packer brisket at a...

Restaurant Depot Requiring Purchase Every 40 Days

I spoke to Restaurant Depot's California, Southwest & Northwest regional office in Anaheim, CA and was told that this policy absolutely untrue. I told told them that a cashier told me this and it was corroborated by a store staffer. I suggested that if two people in the store are advertising...

Restaurant Depot Requiring Purchase Every 40 Days

I was in Restaurant Depot in San Jose, CA today and was told that if I did not purchase something from them at least every 40 days my membership would be canceled. The folks at the store told me that it was not up to them but this was a new chain-wide policy enforced from their headquarters in...

Change the port HM is 'listening on'

Most consumer routers support the port forward feature. Unless you have a router that has been provided to you by your ISP, I would think that you already have access to this function. -- Mache
