Tri Tip Purchase Success in Maryland !

I picked up a couple of tri-tips yesterday at Costco. We have enjoyed them before. What I had not noticed before was they now had what they called tri-tip steaks. It looks like they sliced up our beloved tri-tips. Did not try them....tom

    Pork Sparerib 'FLAP' meat

I also cook them with the ribs. I also cook the other trimmings. On another site, I asked what todo with the trimmings. I received a lot of suggestions, but so far we have always just knawed away and there is little left. What is left, we added to some beans we were cooking...tom

    Smokin' at Higher Altitudes

We live at 5200 ft. I use a 50-50 mixture of lump and Kinsford. The main reason is that we have longer cooking times and I wanted to reduce the amount of ash which was a problem on longer cooks. Lately I have not been using water. I simply foil the water pan for ease in cleaning up and with...

How often do you clean the inside of your WSM?

I've only had mine for a couple of years and I only clean the grates and remove the ashes. I will clean it when it looks dirty...tom

Taylor vs. Polder customer service experience

I agree with Rita Y, I wish the NuTemp had an on-off switch. Outside of that it is great. I once had one of the remotes go bad, NuTemp was great on replacing it. I also purchase a Polder in years past. Piece of junk. Never again...tom

    Q for a crowd

I've been cooking my brisket the day before as it relieves me of the worry about when will it be done. I follow a procedure that I found on epicurious.com. When the brisket is done, cool it for an hour. Wrap it in foil and chill. Rewarm it wrapped in a 350 degree oven for 45 minutes. The only...

    Costco or Sam's Club

Julia Child, it was rumored, bought her meat at Costco. We left Sam's club for several reasons and have always enjoyed the meat at Costco. Tri tips, for example, are excellent and $4.79/lb....tom

    Pulled chicken sandwiches

Last night we tried the pulled chicken. We pretty much followed the recipe, but my chicken pieces were not as uniform as Chris's. Used 1 lump of hickory and 2 of pecan. It was great. Can hardly wait now until hindquarters go on sale....tom

    Bad Ribs!

That is a real bummer. You obviously got bad meat. It is too late now, but you should complain. I don't know how much good it does. I once got chicken from the local super market and when you opened the package, it made you retch. I took it back immediately and they refunded the price, but I...

    Santa Fe Cured Pork Loin

I love brisket and the recipes I follow are from www.epicurious.com Search on brisket and then look at Barbequed Texas Beef Brisket. I like it a lot, but do not mop as much as they do. When WSM is steady leave it alone. I have tried cooking it the day before and then rewarming as they suggest...

    Santa Fe Cured Pork Loin

I tried this last week. Brined it for 4 days. The roast was nice and moist, but we were disappointed with the flavor. It was bland. Don't know what went wrong. Reread the recipe and it seems we followed it....tom
