What Brand of Wood Chunks do you use

I have always like local wood. So I used multiple hardwoods. Orchards usually have piles.... Hickory is one wood I typically could not find but for me pork requires some hickory I usually would find at HD. For grilling, I like pecan shells.

Invest in a quality thermometer. And, as Chris suggests, use it properly.

    County Ham ????

No curing expert here but... A country ham is dry cured and aged maybe 1-2 yr. That is, it is packed in salt then hung to age and dry. I do not have access to the best way to cook but from memory: 1. Soak in water to desalt 2. Simmer in large pot of water 3. Bake It was fabulous. The other...

    Coronavirus - Covid 19

As estimates for spread drop...a few observations. Early best estimates suggested the R naught of this virus was projected to be 7 by many. Meaning one contagious person would expect to infect 7 others (as best I understand). Yesterday I heard reports that the real number is 1.3-1.5. That is...

    Coronavirus - Covid 19

There is a very interesting story in Wall Street Journal today. Apparently, an exaggerated immune response-they call it a Cytokine Storm is what causes death in some. A drug used to treat arthritis-Actemra fights that exact malady. This drug saved the life of a physician in Washington. I...

How to NOT load a mower in a pickup truck.

So I've been considering getting another commercial style walk behind mower. Maybe the smaller consumer size 33"-34" lightweight. My issue is how to best transport it. Can't quite figure out where to store a trailer. Long story short, I googled how to load a mower in a pickup. WOW. These are...

    Coronavirus - Covid 19

Whew! Some of these conversations are not much fun. Perhaps we should all step back and understand we are in uncharted territory and none of us has THE answer. Both sides are passionate. Earlier Chris shut a conversation I started. He was right. If so many have to huff and puff, I suggest an...

How many cases of virus in your county ? Deaths ?

Please post how many cases of corona virus are in your county. Deaths too. Note from Moderator: I'm sorry I did not catch this thread when it started yesterday. I do not want to use this barbecue forum to track Covid-19 cases and deaths. Thanks.

    Coronavirus - Covid 19

To be clear...I'm all for flattening the curve to not over-burden the healthcare system. Unfortunately, the easy answer is shut everything down with no notice. It is more than disrespectful to shut restaurants with an 8 hour notice. They closed the restaurants with 8 cases of virus in the whole...

    Coronavirus - Covid 19

The beauty of this country is part due to the diversity of the landscape, the people and their lifestyles. Living in a county of 100,000's of people we have now accelerated up to 8 virus cases. As I have traveled the county (for my businesses) I wonder what is our future? We were commanded to...
