    Wood chips wet or dry?

I'm kinda new to the smoking thing and have noticed on this site that some people advise wet chips in their recipes and some dry. My questions to you are:1)do you use wet or dry chips 2)is there a difference and what is it? Thanks.

    1st Butt in Over a Year / ET-73 / Sand / Air Leaks

I have an ET-73 and the range on it is terrible as well. If it's not in direct view of the transmitter I am lucky to get 20 feet.

    Knife questions

Jim I have also been looking for a good knife myself. Today I found a vendor who sells Shun Kershaw knives and the second I picked up the santoku knife I new it was the one for me. It almost felt like an extension of my hand. I just have to find a cheaper place to buy one now as it was on SALE...

    Grilled Peaches

Thanks folks I didn't mean to be pushy I was just panicking a bit as time was running out for me. I ended up just grilling some fresh pineapple and all was fine. I will definately try out your recipes though as I need to start broadining my menu a bit and I think a healthy desert is a great...

    Grilled Peaches

I've grilled pineapple before but I've never grilled peaches. I don't know if I even did the pineapple right I just sliced a fresh one fairly thick and tossed it on the grill for a couple of minutes both sides. I was wondering if there is a special technique for grilled fruit especially peaches...

    Leftover charcoal for MM

Paul I use lump exclusively and have to agree that it only burns hotter if you let it. I have tried kingsford before however, and didn't find it burned any longer. To be quite honest I am very suprised that more people here don't use lump. There are some very knowledgeable people on this...

First Pork butt on WSM pictures

Rick is using a Maverick ET-73 if you do a search on that you should find lots of info. IMHO however I own an ET-73 but just recently bought an NU-701 by nu-temp and I think it is a more versatile and also superior unit. That is just my opinion, but you can do a search on that as well and find...

    Nu-701 any problems?

I got a NU-701 during the promotion with 3 recievers. I think it's great and I personally like it a lot better than my Maverick ET-73, but when I went to do my cook this weekend I found that the female recepticle on one of my remotes had came loose inside the unit and therefore the probe...

    Leftover Kingsford

I use them on my next cook ,but if there isn't much left or the pieces are really small I put them in a steel trash can in my garage and use them in my woodstove. Every little bit helps I guess and at $13.00 a bag for lump I hate to waste any.

Things we learned this weekend -- ’Fess up, y’all!

I learned that my drinking hobby can interfere with my cooking hobby if I'm not carefull. Did some ribs over brisket and the ribs were a big hit. Personally they were too tender(falling off the bone) but that's the way a lot of people seem to like them anyways.(still sober at this point) Did a...

    brisket gurus needed

Jeff I did a brisket last night also and it sounds like pretty much the same results you had. I also believe I cooked it too long as I screwed up on the fork tender thing. It was only my second brisket ever so I'm still at the bottom end of the learning curve. Now what is your plan for the dry...

    Pork ribs question

I was at my butcher today to pick up a brisket, and we got talking about ribs as I am doing ribs over brisket this weekend. I mentioned that I was basically doing the 3-2-1 method and he said, when I go to pull them off to put the sauce on for the final hour that I should sauce them when they...

    Lump -vs-Briquettes

When I am done smoking or using my kettle I shut down all the vents and smother the coals. Any thing that is left and of any decent size I will reuse on my next cook. But the pieces that are too small and fall through the grate, as well as any pieces from the bag that are too small go into a...

    Lump -vs-Briquettes

I tried Maple Leaf lump after reading the reviews on the naked whiz and was very impressed. There was very little small debris and the smell and flavour was fantastic.

    Lump -vs-Briquettes

I like lump, I find it gives a nicer flavour and I have never had issues with temperature spikes. The only "dissadvantage" I have found with lump is you may have to refuel more often on a long cook because the variation in size and shape doesn't usually allow you to put as much fuel in. Just my...

When You're Smokin' What are You Drinkin' and Listening to?

Black russians, a good merlot, or yellow tail shiraz are usually high on my list of drinks when BBQing. I've got about 2000 songs on my MP3 player with music ranging from Frank Sinatra to Rage Against The Machine I just hit random shuffle and away I go!!!
