    Brisket Flat on OTS

Yeah the kettle does great as a smoker as long as you don't need a ton of food. I do the some thing if I'm doing a small smoke and don't need the WSM's. Figure it this way people have been smoking on kettles for over fifty years. And yes I love the charcoal holders too. Especially with the...

    Favorite BBQ book?

Yup it's gotta be Peace,Love and BBQ by Mike Mills. Another good read is Smokestack Lightning by Lolis Eric Elie.

    wsm mod awesome

I don't understand....why not just smoke on the kettle. There was no need to butcher both. People have been smokin on kettles for fifty years. Sure didn't gain anything that I can see. But hey if it works.

    experimenting with the rotisserie

I do mine like Steve does his with Weber baskets. If you want to do it on the cheap just stand a few bricks on edge then fill in back of them with charcoal.

Cooking time for a rotisserie chicken over charcoal

Good luck with the chicken. Estimate would be 1.5 to 2 hours but as I'm sure you know temp is what calls it not time. I also had a rough time years ago when I figured a little mesquite was good so alot would be better. Even the dog wouldn't eat the steaks I made. I've learned so much here since...

Is the Ranch Kettle as Easy to Smoke With as the WSM?

I think anytime you try to smoke on a kettle you have to keep more of an eye on the temp. it tends to swing up and down much more than a WSM. But this is just my experience when I tried smoking on my 22" OTG kettle. It did work but I did more babysitting than I would have liked. Here's a rack of...

Why is a WSM so much $$$?

I haven't installed the grates or the ball valves yet. The ball valves will be put on using 1/4" self tapping screws through the attached floor plates.so no welding will be needed. Next plans are for a holder for my Maverick thermometers, dual tables, beer holder, air conditioning and power...

    New Performer as a gift!!

I'm thinking if you cook free food for me I might have to get you a WSM for a wedding present.

Why is a WSM so much $$$?

Chuck I begged, borrowed and stole (no stealing was involved)to try and see if I could make a UDS for nothing or on the cheap anyways. Plus I wanted it to be a no weld build so anyone could do it. I scrounged parts and pieces for months. A plumber freind gave me the valves with attached floor...

Why is a WSM so much $$$?

Chuck if it's an issue with the price build a UDS. I did this one for the total cost of zero. There 22" and if you use a Weber lid you can have two to three racks going. Plenty of room on the cheap.

    Food Saver bag failure

I always use a folded paper towel in the bag if there is even a slight chance of moisture. I also double seal the bag after loading it. Seems to help.

    Dissappointed in New 26" Kettle

I put a couple of self tapping screws in to hold my kettle legs on when I picked it up. It didn't do much for the wobble but when I'm cooking it just sits there and doesn't move.
