    Today I cooked a small brisket flat and a big ole Tri tip. Took the brisket off a little too soon. It could've been more tender but was still pretty good. Tri tip was great. Cooked it on the WSM with no water pan at 300-350 degrees. Took about 2 hrs to cook it. Will definitely be doing that...

    Brine question - replace water with Apple Juice?

    Just wondering if anyone here has used a basic brine recipe (salt, water, sugar) and replaced the water with apple juice to make a flavor brine? I've used Keri C's apple juice brine recipe from this site more than once and love it. I was just thinking about trying the other.

    Nicely done cook on the 14.5 Robert! I've always cooked them low and slow with a dry water pan. Maybe I'll get brave enough to try it.....or maybe not :eek:
