    Message to the lurkers... *****

I would agree. Don't be intimidated, jump right in and ask a ton of questions. That's the only way you're going to learn... and the only way we're going to learn as well! Everyone is great on this site and I check it at least 1-2 times per day. I've learned so much!

    Fish Tacos

I used Bobby Flay's Fish taco recipe found here http://www.foodnetwork.com/recipes/bobby-flay/fish-tacos-recipe/index.html and they were delicious! Of course I forgot to take any pictures, maybe I'll get some pics of the leftovers!

New Performer: Test Burn #2 :)

Michael- Great job on your test burns. Just remember that when you add the cold meat, it'll drop your temps quite a bit. Either way, it's always fun!

    k comp.

I would agree that it burns faster and I'm not a huge fan. I usually stick with the blue bag but every now and then Costco or Home Depot run a very good sale on the comp that you just can't beat. Therefore, I'll only buy the comp when it's on a great sale and cheaper than my boy blue!

Advice for a first time WSM owner

Kevin- Happy b-day and congrats on some of the best gift's you'll ever receive! My suggestions... GET STARTED! As everyone said above, foil the water pan and it will run hot for a couple of initial cooks. Many people will close all vents and smother out the charcoal if doing a shorter cook so...

    Replacment parts.

Typically the warranty is just for the original owner. Now, I've never done it, but I have heard of folks contacting Weber and not notifying them that is was purchased used. I'm not saying... I'm just saying.

How did YOU find this site? *****

I was referred to this site by another competition team. Since then, there hasn't been a night (when I had an internet connection) that I haven't check it out! I love looking at all the new ideas and my wife always rolls her eyes!

How'd you get into barbecue? *****

Some of the best memories of my childhood are grilling with my dad. From early on I became the BBQ cook at our house and we had a blast. My grandfather & uncle competed only once in the Great Lenexa BBQ but my cousin & I were hooked. We made a deal years ago that some day we were going to...

    Pop-Up Tents

Thanks for the input all. I actually picked up a used 10X20 canopy tent from CL. It's not a pop-up but is easy to put together, is waterproof and was only $75. We've done a number of comps and I've never had a problem setting up a tent that wasn't fire proof. In fact, I don't know if I've...

    One Touch Platinum vs Performer

I was going to purchase the Performer but ended up finding an older one on CL for $35! It needs a little TLC and the gas tank is mission but I'm okay with that since I'll use my chimney. These things are built to last so a $35 investment is with it. I would go Performer and either find one on...

    Nervous!

The whole cook turned out.. okay. The pork was fantastic! The ribs were pretty good but I'm still working on those. When I had my off-set I used the 3-2-1 method and it worked out great. I cut it down to 2-1-1 on the WSM but today after 2-1 they were already too fall-off-the-bone. I think I...

    Nervous!

Well I started out a little hot (got up to around 325) so I had to dial it down a bit. I decided to go to bed at 2:00am and I just woke up at 7:00am (central) and the WSM was right where I left it! I know it's only 5-hrs but I sure do love that thing! I just had the butts on last night...

Do you keep your grills out year round

I have an 18.5 kettle that I've had for about 10-yrs and for the most part kept it outside year round without a cover. The past 3-4 years I decided to buy the "cheap" Weber cover that would break down half way through the winter. You would never know that though, it's in great condition. Now...

    Nervous!

So I was going to wake up early tomorrow (this) morning to put on 3 butts, 2 briskets & 3 slabs. By the time we got home from the movie, it was already midnight so I decided, what the **** let's start it now and do our first overnight cook! I'm just about to put on the butts and hope to wake...

    Costco briskets

Costco used to only sell flats and then about 8-months ago started selling packers. However, last week I went to get a couple of packers and they only had flats! I ended up borrowing my cousin's Sam's Club card to get whole packers & bone-in butts since Costco doesn't have those either.

    Vacuum Seal

I ended up taking many of your suggestions! Like Bill, I just cut one end and slid one of the butts out. The other one was still pretty tight in the wrapping so I just rolled the other end of the wrapper over. Then I used saran and wrapped it up real tight, then foil, then another layer of...

    Vacuum Seal

I'm doing a fairly large cook this weekend and part of that cook will include 3 pork butts. I purchased them at Sam's where they come in packs of 2. So for those of you that are not good with math, I'll have 1 left over. My wife's company has a vacuum sealer and they offered to let me use...

    Steak....

I've found that letting them sit on the counter for 30-minutes or so really brings out the flavor. I think that they are more tender that way. My wife would eat a raw steak if I served it so I'm always trying to not over-cook everything!
