    Thank god for my HEB...i will put my local HEB's meat selection up against any other store in the USA...HEB meat at least in my area is that good. There select is better than most choice, there choice is better than most prime and there prime selection is heaven.

    Burgers, I’m a lot closer after tonight

    Awesome looking burgers...Ground sirlion is all i use for burgers...my local HEB always has fresh ground sirlion. Jose try rendering some bacon then coating the patties with the bacon fat before seasoning, i think you will like it.

    Beef cheeks are amazing, put in crockpot before going to bed, barbacoa will be waiting for you when you awake. Heat up some corn tortillas, have some fresh pico de gallo, quacamole and your in heaven.

    The only way to mess up beef short ribs is to seriously over cook them, its kind of hard to do that.

    Doug if you want to maintain temps above 450 add a second exhaust vent opposite the original exhaust vent.

    Doug there is no need to preheat a kettle grill, the metal is so thin its heated as soon as you dump the coals. I use KBB 100% of the time and its ready in 15 minutes.

    Brian what you got are loin ribs. Cook them the same you would a true bb rib.
