Poll Idea - How long do you wait between Lighting & Putting the Meat On?

Meat on without wait. I see no reason to do otherwise. Catch target temp on the way up. Early smoke doesn't bother me or the taste of my food

General Question about "Probe Test" for Tenderness.

Re pulled pork----there can be a difference between tender and able to pull. If you are using bone in butts. able to pull, IMO, is able to wiggle the bone and have it look like it'll come out clean. You can cook a butt to, say 190, have it plenty tender but good for slicing not pulling. If you...

    Craycort Cast Iron Grates

I've had mine about 6 years. Wiped a little peanut oil on them before first use, after that nothing. Cooking on them keeps them seasoned. Preheat for 10 minutes, brush, and cook

Thermapen Mk4 Open Box Sale $76

Bought last month. Highly recommended. Readout is always from left to right no matter the position. Back light great in the dark where I've been most of my life according to most. Probably last a lifetime. Probe opens a little tight, but loosens with use.

Best way to bring the 18.5 to 280-300 ish degrees for chicken

Rob, you want great chicken? I've been doing http://www.virtualweberbullet.com/chicken6.html for over 8 years. There's nothing magical about a specific temp, so don't sweat the little things. Fire up coals and let her rip.

The door gaps are "designed that way" - I had to share this

My WSM is over 8 years old. The door has been stepped on among other things. I fix it as best I can and don't worry about it. The vents do their job. IMO, small gap is not a concern
  20. Dave/G

What is everybody using to insulate thier WSM's?

Agree with Bob and Dwain. Easier for me to say since I moved from Massachusetts to Florida. Never had a need to do anything
