    Building shelter for my WSM

I wanted to get a feel for the actual size of the cabinet so I cobbled this together. The cabinet is going to end up being pretty deep compared to how wide it is. It is also going to be fairly short since the top of the work surface is going to be below the temp probe groment. My initial design...

    Building shelter for my WSM

Hello again. I have been very busy and even managed to get a little more done om my WSM cart. On an unrelated thingy, on Tuesday our dog had to have ACL surgery on it's back leg. Darn dog. Oh well its only money, right ?? I also had the opportunity to sharpen my wood fence building/repairing...

    Should I pull my brisket?

A 17lb brisket is a whopper. I would like to read about the cook. Temp ? Wrap ? Did it turn out tender and moist ?

    What would you do? :)

    Well played.

    Pork Butt Newbie

After reading all the pork rub recipes I made my own variation and it is pretty simple. The recipe referenced above is a very good place to start and don't worry to much about exact ratios. I will recommend a little different cook method because I do not prefer a black bark on my pulled pork. I...

Anyone been watching BBQ with Franklin on PBS?

I have been watching them on the streaming PBS channel through the ROKU player. It is interesting that when he cooks on the little smoker the door is open. But that is aligned with what he talks about in the pit building episode and the fire episode. He is all about having plenty of airflow...

    What would you do? :)

Around here if you charge money you technically become a food vendor and are subject to all licensing and health code requirements, not really much chance that it would come back on you...just sayin'.

    Building shelter for my WSM

Well, I played in the garage Saturday and even managed to do a little bit on the cart base. When I started this project I mentioned that it is as much a learning vehicle as it is just building a WSM cart. To that end working with rough cut lumber is a very different animal than working with high...

What is everyone cooking this weekend?

I have a brisket thawing right now. Baked beans and Dutch oven potatoes are the most likely sides.

http://www.amazon.com/exec/obidos/ASIN/B000SDETH4/tvwb-20 http://www.amazon.com/exec/obidos/ASIN/B000VY2EPY/tvwb-20 I found these, before I buy anything I will see what Home Depot has on the shelf.

Alright guys. Just bought one of these bad boys

The cooker doesn't really need a break in even though it does work better with grease buildup. I did a test burn just to see how the temperature control worked and to see if closing the vents would put the fire out. After playing with the vents for a while learning how the WSM responded I threw...

    Building shelter for my WSM

For the Slide-Aside hanger do y'all think that could work with a WSM 22" lid? The kettle lids are much more shallow. I had not thought about the sign hanger or something like the coat hook, I like both of them.

John, that is an excellent cart. Well done.

    WSM 22.5" leaky bottom dampers?

I agree, that is a terrible fit, even worse than a ECB. Based on the way mine fits and the ones I have seen on the store's display WSMs I don't know how it can be so bad. The damper appears to be correctly formed, is the screw tightened? It should be tight enough the damper has resistance when...

    Building shelter for my WSM

I had a couple of hours to work in the garage yesterday so I installed the breadboard ends onto the cart base. Since my dado blade for the table saw really didn't work the way I expected I went back to the router to cut the mortise. I didn't have a router bit long enough so I bought this 1/2"...

    Newbie questions.....

1....I use standard Kingsford charcoal and I am very satisfied with the results. 1a...start your fire using the Minion method, easy to read about that on this website. 2....I personally have only used the bottom rack once to cook a turkey using a vertical stand, next time I will cook it on the...

Do you clean inside after every cook

I only clean the grates. When the inside of the cooker gets gunked up to the point of flakes forming I use a grate brush and knock the flakes off the inside surfaces. The build up of gunk on the inside surfaces makes the cooker work better.

    One more sacrilegious post

HaHa, yeah the memories of yesteryear linger fondly for me too. That does not mean I miss using the charcoal lighter fluid though. When I used the lighter fluid I would stir the coal bed with a fireplace poker making the coals flare up and I wouldn't cook until the flare ups stopped. It was a...
