    I get the oak off the fire wood stack and cut it into chunks. The fruit wood was a Christmas gift from my sister-in-law. I don't know the brand but she got me several boxes via mail order. Hopefully she will gift me some more.

    I use several (6-8) fist size chunks of oak distributed across the bed of charcoal. If I use fruit wood (chunks varying between golf ball and tennis ball size) I use a bunch of it distributed across the bed of charcoal. I get a rich delicious smoky flavor.

    Thanks for the kind words. I have changed my cooking temperature from 220ish to 250ish and that really knocks a lot of time off the cook. The brisket is already in the cooler resting.

    1st cook Genesis

    Awesome cook! I love my Genesis. It serves as a second oven for our holiday feasts. Before I got the WSM I was smoking briskets, chickens, and ribs on it. My buddy at work cooks pizza in his. My only regret is not getting one sooner.

    Brisket question

    I would cook it low and slow, seasoned with SPOG. Monitor internal temperature with a thermometer. Start checking for tenderness around 190. When the probe goes in nice and easy it's ready. Should turn out great.
