Tom, next time you visit that BBQ supply, if they carry an Simply Marvelous rubs, I would try their Spicy Apple, Pecan, Cherry, Sweet and Spicy. Low salt levels and no MSG ! They have a few new ones that I have yet to try. OH... that Cherry Habanero Glaze is good.

Have a slew of Maglites. Have had excellent service from them. My ML300 decided to stop charging. Brought it to their offices in Ontario CA. Left with a working ML300 and also purchased 2 ML150LR flashlights one of which was one of first produced.

In the oven at your home, how close is its temperature sensor to whatever you are cooking in the oven ? So why do you place the Thermoworks pit probe soo close ("less than 1 inch") to the cold meat ?

One of my sons used to work at this resort doing Terrain (Snow) Park building (ie building jumps etc out of snow).

Brock... Apparently you don't get my little bit of attempted humor with the word Amateur. And what official, recognized licenses have you attained ? As far as overcooked... Fall off the bone ribs ARE overcooked ribs. Educated yourself on meat structure and changes within said structure...

While most here are probably considered amateurs, they, more than likely, approach this hobby in a professional manner ! A quick read of the video's creators "About" section is very telling. They wanted to learn how to cook their ribs like their relative does, or did. EASY... fall off...

Just watched the video.... Only one word for them.... Amatuers ! Let's see... comparing one set of beef ribs to the other... Were both the same size and from the same animal ?.... NO Comments about the smoke ring... Smoke Rings bring nothing to the taste table ! And about the smoke...

We light one end only. Has worked well. I also run the Thermoworks Signals & Billows. Probably helps circulate some heat.

We also do the snake method with our 22 WSM when smoking at very low temperatures, such as smoking bacon !
