    Tom, since you mentioned Harry Soo... Wrap the brisket when the bark is set and the color is to your liking... ie, no specific temperature.

    Hi Brian, Short answer is no. I just don't do long cooks at low temperature. Other than bacon, my lowest temperature is in the 250 - 275 range. Mostly 275. I don't remember what temperature I used to use when first started cooking BBQ (mid-late 1970s).

    I use the snake method in my 22.5" WSM when smoking Bacon ! Remembering that the number of LIT coals determines the HEAT range, the snake is perfect for low temperatures.

    Misha.... Charcoal manufacturer is not the problem. How you are running the WSM is. There is a reason successful Pitmaster are called what they are, rather than being called Cookmasters !
