    Wow, turned out great. I have tried several briskets. My best one was when I knew less and just went for it. My worst one was when I was too scientific about cooking it.

    How many coals to start for spare ribs?

    I use 1/2 chimmney on low and slow 225 and a almost full on hotter cooks. Simple and easy. I've never counted charcoals. Seems to reason, more hot coals equals a hotter fire. Less coals equals a less hot fire. Not trying to win a competition, just trying to make good food.

    Hi, I have an 18 and find I can cook plenty to too much on it (is there really a term "too much bbq?"). Use both shelves and your fine. If you will use it often and cook for friends a lot go 22. I've been fine with my 18.
