    Hey Rick, I think an electric smoker is the way you would have to go for a high volume biz such as owning your own restaurant or even a busy catering place.

    blasphemy! I love dealing with the weather. Thats the challenge of BBQing.. Granted, if I`m smoking something for myself its not stressful but if there was someone paying me for results... I might be a little stressed.

    Nice! Of course, I did two shoulder yesterday and have no pix to prove it. I was so busy smoking, playing mr. mom and had a friend over that taking pix was not going to happen. I`ll try next time. Your job looks awesome and probably tastes even better. Keep it up.

    Is it possible to smoke 12 racks of baby backs in one smoke? I`m not worried about getting them to fit, I have racks a plenty. I was wondering if I`ll also need to fuel the WSM more being that I have more food on there. THanks.

    I`m going to smoke two pork shoulders at the same time and then I`ll do the ribs on a separate smoke. Right now I`m waiting for a final head count so I won`t know for use until tomorrow what the numbers are. That`ll dictate what gets smoked with what. Stay tuned.
