Weekend Parties Coming Soon and Need to Prep!

Hey Guys-
Im excited and a little jittery thinking about this upcoming weekend. I`m smoking for two parties. One is a payed job and one is for my 3 year sons birthday.

The payed job consists of smoking 9 racks of ribs and a large pork shoulder.

For my sons b`day party, I`ll be smoking 3 racks of ribs, brisket (for the first time) and pork shoulder. I`ll also grill some italian sausages with peppers and onions.

My largest smoke out so far. Excited!
 
no need to worry - just watch your temps on that brisket - whether you foil it or not i think you will do just fine.
 
I will be doing something similar for my Sons Birthday in November. Are you going to smoke the shoulder and brisket on the same cook then do the ribs on another? I may just do 3 racks of babybacks on the top and a shoulder on the bottom. Then do some chicken and sausage on the kettle the day of the party.
 
I`m going to smoke two pork shoulders at the same time and then I`ll do the ribs on a separate smoke. Right now I`m waiting for a final head count so I won`t know for use until tomorrow what the numbers are. That`ll dictate what gets smoked with what. Stay tuned.
 
Hey Everyone,
Just an update.
My first catering job was a smash hit. A party of 20 who enjoyed the pulled pork, ribs, mac and cheese and coleslaw.

Unfortunately my sons 3rd b`day party was cancelled because my brother in law lost his mom on Saturday morning. We are going to have the party next weekend so I`ll be smoking some pork shoulder and brisket.
