    Why Cook Bacon?

Just made my first batch of bacon (thanks to Bob Correll and Chris Allingham!) and a question popped into my mind. If the purpose of curing is to inhibit the growth of the nasty stuff, what purpose does cooking to 140º while smoking serve? JimT

    Bacon from side pork?

A local grocer ordered pork belly for me, but when I got it home, it was labeled as side pork, which I'm inclined to believe it truly is. Should I just proceed as if it were belly? Anything to do a little differently? It sure looks like it would make good bacon! Thanks, JimT

    Green Olive Burger

Being a native Michigander, I was totally amazed that this was not known world wide! The basic olive burger is simply thinly sliced or chopped green olives (with pimento) mixed with mayo to your liking. (My wife prefers Miracle Whip) Cheese is great, as on all burgers, but please, please...

Braising: beef roasts & stews...lamb shanks. Anyone pre-smoke?

I think most of us have Steve. When you smoke something like ribs or brisket, then wrap in foil to finish, isn't that smoking then "braising"? JimT

Smokey, char-grilled flavor. Why is it missing from my burgers?

M Borner, Just another thought. Are you toasting/grilling your buns? Do your friends do it? In my experience it adds a whole new dimension to the flavor of a burger. It could be what you're missing. JimT
