    Yeah. Fed Ex never located the package or resolved the issue. Spider re-shipped my missing box and it came while I was on vacation. It is still on my patio in the box. Will assemble next week and fire it up!

    That does seem like a long time for one pound chunks...shoulder can take much hotter temps without any discernible difference in taste/texture. Cranking your heat up to 275-300 could be a good strategy here to get it done faster and allow for a rest. Even to get through the stall faster, you...

    Loving my Performer

    The gas start and the table are great. There is also the storage for charcoal. The cooking area sits up quite a bit higher than a regular Kettle. It also has a nice lid holder (which I rarely use)😬 It’s just a great cooker and the added bells and whistles make it very easy to use.

    This place was just a two minute walk from our Airbnb in Cortina. Bar Toto! Specializes in pulled pork! I had the #4…really good! Zoom into the menu Sandwich had some great flavor and a nice crusted bun. Cortina is awesome Cheers!

    Bacon wrapped sirloins, taters and green beans

    Yeah. Olive oil and salt. Indirect at about 400. I add more oil to the tops as I go. Remove when they get the right color/char.
