    My WSM has really improved the outcome of food that cooks at a lower temp for a longer time. I thought I had a good handle on things cooking low and slow in my Performer, but the WSM takes that to a different level, with hardly any real input from the ding-dong operating it (me, not you)...

    I recommend reverse sear too. 125F-ish is where I like to get mine before searing. Up to that point I just cook indirect.

    I used to just use KPro in my Performer, but have been using it in my WSM this year. I feel like I'm getting more stable temps, more consistently and for longer in the WSM with the KPro. The low ash is a nice bonus.
