    Braised Beef Goodness

That looks delicious Dan. I really love beef short ribs. I've put a dry rub on em before and grilled em for about 5-6 hours indirect. They are one of my fav's. Gotta cook em long and slow, but great flavor. They're about $4 a lb here, so I watch when they clear em out at the discount bin for...

    New purchase and 1st cook

Noe, yes, the ABT's went on late. I added more mesquite hardwood charcoal later. They cooked for about 3 hours total. Stuffed with Muenster cheese, which I've found to be my personal fav. The CSR's were dry-rubbed with Lone-Star rub, and believe it or not, the beef ribs were marinated in...

    New purchase and 1st cook

Thanks Jim. You've inspired me from afar. I tried to get more on, but I'll have to wait till my next day off to kick it up a few more notches. Beef back ribs, CSR's, ABT's, stuffed scallops, taters, and there's even a top sirloin hidden in there somewhere. I went a bit wild, but I had my...

    Smoking with Maple

I had some branches fall off my maple tree (not sure what type of maple). Can I use that type of wood for smoking, and is that a strong or mild smoke? Thanks Jeff from Nor Cal

    Yams

I do not let them cook over direct heat, thus they do not burn. I turn every 15 minutes or so and cook about an hour or so. Just give em a pinch to see when done. Do not remove the skin, as that's the best part. I eat em like potato chips.

    Yams

I'm totally hooked on yams (smaller the better), rubbed with EVOO and S & P then grilled. Once you try this, you might never bake another potato again. Peace, Jeff from nor cal.

What do you use leftover pulled pork in?

Try PP carnitas for burritos/tacos. 1st take about a TBS of oil in a skillet and crisp up a handful of PP. Add refried beans and mex rice and roll one up in flour tortilla, your hooked up phat
