Just a Quick Set of Tuna Rellenos

A few days ago for lunch i got out a large can of tuna, some mayo and sour cream, added a small diced Kosher pickle and some 1/4 inch chopped tobasco chilis, salt, fresh ground black pepper, garlic powder and dried chopped onion and mixed it all together for some nice tuna salad on bolillo...

    Ambitious?

Ok, I'm running late on this tread, but it sounds like "congrats" are in order -- so "CONGRATS"! But even late I wanted to ask if you have looked at the High Heat Brisket article in Cooking Topics. I've had success with that method twice now including a 19 pounder in my 14.5 WSM. Much shorter...

    Short Rib Smoke

You got that right. Even the small ones were meatier than they looked uncooked. I would do it again, but first find some truly good ones to compare. But this was head and shoulders the best of my 3 tries. 🙂

    Simple Spicy Meatloaf

    Short Rib Smoke

Thanks, just time on my hands... and yes, don't forget the timing... :p Now I can re-assemble and install my grill cabinet so that I can get my back area (especially kitchen to grill) established the way I want. Hopeful finish date: Saturday.

    Short Rib Smoke

As promised: https://tvwbb.com/threads/savory-mop-sauce.95742/ https://tvwbb.com/threads/simple-spicy-meatloaf.95743/ I felt that the meatloaf came out perfectly! Just enough spice for me without being intrusive. So may be a bit much for some ( @Joan ?). Most of it went into the freezer...

    Simple Spicy Meatloaf

This was an impromptu recipe that I did basically to use space in my smoker while I had it running. I resisted the temptation to add more hotter spices (chili powders, cayenne, etc.) specifically to learn the impact of the tabasco chilis that my sister grew and gave me. She gets a copy of this...

    Savory Mop Sauce

I used substitutions like dried grated onion and garlic powder and half the beef stock, but the result was fine. Savory Mop Sauce ½ stick of unsalted butter ½ white onion, sliced thin 6 smashed garlic cloves 2 cups beef stock 1/2 cup coffee or apple cider vinegar 2...

    Short Rib Smoke

When it reached 155*, the meatloaf came off. It benefitted from the sauce mopped on the ribs above. The small ribs got to 200* first. About 15 minutes more for the largest. While waiting, I got the zuchini ready and mixed the twice baked potato. They grilled quickly with the sampler wings...

    Short Rib Smoke

I was a bit leery, but it was still disappointing to be right. Only one of those short ribs were 2", the other 4 mostly bone. But moving on, I rubbed with a mix of half Montreal steak seasoning and half ground pepper. When i start my WSM, I usually try to fill it so also prepared a potato...

    Short Rib Smoke

Well, I was planning to smoke these ribs today, but it started grey, gloomy and rainy so I opted to wait a day. Got lots to do in my micro shop just getting my grill cabinet refinished. So tomorrow I'll continue this. (Nasty trick, huh, to provide a tempting title and then duck. )...

This was on youtube so I thought....

Another who is glad it's worked out. Here in NC it's warmer but constantly humid. I keep my pellets in a bin with plastic clamps at each end and have had no difficulties with starting the tube. I wouldn't want to leave the pellets in an open bin. But you've apparently found you answers...

Keep your gas grill clean...you've been warned!

Some people are heap full of d---a--!

Oh, the bread. I will die without you.

We have a well, locally popular bakery ot far away, but prices are daunting. My favorite has been Costco French peasant, but when we move, a new Food Lion opened and they have some great products including fresh Italian which has turned me away from Costco. I should try other offerings but...

    YEA!!!!! It's here-HAPPY NAT'L CHICKEN WING DAY!!!!!

I found time to prep and grill a bunch of wings that came out really well. Crisp and delicious. Didn't get a lot of pics, but can prove I cooked them with stuffed jalapeños and a Hasselbeck potato.

Went out for milk, came home with another Weber

I wonder about finds like that and why? I got a good deal for my 14.5 WSM, but not free! But like this Spirit, once I got past the surface grime and the soot inside, it was basically brand new! I just assume someone bought a smoker (grill), didn't know what they were doing or decided that...

    Tastes like good bread.

    Parmesan Burgers with Balsamic Ketchup

If you haven't tried potato hamburger rolls, you're missing out. I only use those or French/Italian bread at times. The potato rolls taste great, grill well, won't fall apart and are available for hotdogs also. Seriously, you owe yourself.
