Simple Spicy Meatloaf

This was an impromptu recipe that I did basically to use space in my smoker while I had it running. I resisted the temptation to add more hotter spices (chili powders, cayenne, etc.) specifically to learn the impact of the tabasco chilis that my sister grew and gave me. She gets a copy of this recipe for "free". ;)

Simple Spicy Meatloaf

- 2 lbs ground chuck
- 1 raw bacon strip diced
- 8 fresh tobasco chilis cut into 1/4" lengths (any seed removal optional)
- 2 eggs
- 2 tbsp Worchestershire
- 1/3 cup Panko (or other bread crumbs/crackers)
- 1 tsp freshly ground black pepper
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp garlic powder
- 1/4 cup dried onion bits (1/2 cup finely dice onion)

Mix well and allow to setup in fridge an hour before adding to the smoker. Before going in the smoker, a quarter cup mixture of 2/3 ketchup, 1/3 Franks. Hot Sauce spread over top.

I advise wearing gloves or washing your hands thoroughly after cutting up the tobasco.

Ah yes. I always forget that and usually suffer the consequences hours after. Or generally immediately as well
