    First I soak the bottom in water under the hot sun. Rinse then spray to your heart's content. Then repeat as necessary. Finish with some Simple Green followed by a spray and rinse.

    Setup and take down would be the same. Maybe the kettle for strictly grilled foods and the WSM for longer cooks 5 hrs or more. Huh?

    I've cooked at least three racks of ribs (babies or whatever) on said WSM several times since 2007 with great satisfaction. I don't see any reason or advantage to substitute a kettle for the 18 incher and I don't own a kettle.

    Thyme + rosemary. Bay leaf (cracked) and a three finger pinch of salt. Plus three fingers of turmeric and hot paprika each. Finally finish with rubbing with olive oil both over and under the skin.

    Double charcoal grates on 18.5 WSM

    Does anyone use double charcoal grates on 18.5 WSM to prevent the smaller charcoal from falling thru to the bottom? I was thinking of placing the second grate at 90 degrees to the first one.

    One of the bottom vents in my 18 inch WSM may need replacement. Where is/are the articles and replacement vents? TIA. Aaaahhhhh, it's the damper kit shown here.

    How long does your snake burn for and what temperatures are you running???? Inquiring minds need to know now as tomorrow I will be smoking two slabs, one on the top grate and the other on the bottom grate.
