    I picked up two nice USDA Prime brisket points at H-E-B in Plano TX when I was recently down there. You never see points in supermarkets here in CA, at least I haven't. But those are for another day, I'm on the hunt for a smaller whole packer for an in-the-oven project.

    Yesterday I went to both Costco and Smart & Final looking for USDA Choice briskets of reasonable size and couldn't fine anything less than 20 pounds, some as big as 25 pounds. Where did all the smaller cows go? 😳🐄

    You posted this in the WSM subforum so I assume you’re cooking on a WSM. More likely the water entering the cooker is running down the lid and entering between the lid and middle section. A very very light rain is usually no problem, just make sure you’ve got enough hot charcoal in the cooker...

    27 years of cooking on the 18” WSM and I’ve never seen a single pork butt so large that it won’t fit on the top grate. As others have suggested, perhaps a pork shoulder (unseparated butt+picnic)?
