    High temp brisket question

Gentlemen...I thank you all as contributors to this thread and ask that you steer me toward my first high temp brisket. I'm doing 5 or 6 flats this weekend for my co-workers and want to be sure I have the sequence down pat. Please correct my steps if necessary. 1. Bring WSM up to 325-350...

    Drain holes...

I got tired of my WSM's filling up with water in the off season...so I drilled a 1/4 inch hole in the bottom. Bye bye mold and mildew... When I fire it up I just plug the hole with a ss bolt. I used a uni-bit for a smooth hole...no chipping...then touched it up with a little high temp...

Lazzari Mesquite or Mesquite Lump in General Question

I have not tried it yet but a friend of mine (swamprb) uses it all the time and loves it.

Once more with feeling: Wagyu brisket.

I've done a couple of Wagyu flats. The one thing I noticed is that they cook a lot faster...but man are they good! I get mine from MJ Meats in Lynnwood, WA. Their prices are pretty good and they will ship as well. Here's a link...give them a call I believe you'll be pleasantly surprised...

New 18 inch WSM vs. old, do you see enough improvements?

I need a third WSM for next year' comps. I'm currenlty bidding on one on e-bay. If I loose out I'll purchase a new one through Amazon for 199.00 (current price). But...to answer the question...NO...I would not pay the increase in price for the new WSM. I can add all the new features myself a...

    New WSMs for 2009

I didn't ask, but it came up in conversation...I'm not a big fan of the idea and didn't advocate it as a feature. In the 10+ years I've been at this, I've heard a lot of suggestions, and latches have never been mentioned to the best of my recollection. </div></BLOCKQUOTE> Thanks Chris, It's a...

    New WSMs for 2009

Great follow up Chris...thanks! Not too sure I agree with their reason for not installing handles on the cooking section...especially with the 22 inch. Did you happen to to ask about latching at all...being able to secure the sections to each other?

    New WSMs for 2009

Seems as if the dimensions are very similar to the "Big Drum Smokers"..."UDS"...etc. I have cooked these many times and am amazed at how fuel effecient they can be. Swamprb is our resident UDS expert and can speak from a broader range of experience than I...but here is my 2 cents for what it's...

    New WSMs for 2009

I cooked 6 slabs of loin back ribs using Minion Method and 9lb of Kingsford over 4.5 hours. I lit 40 briquettes and put the rest of the unlit ones in the charcoal chamber. I put about 2.5g of water from the garden hose in the pan. With all vents wide open, it took 1 hour to reach 225*F. After 4...

Hi folks...the uni-bit is not a "must" use...but it sure makes life easier....plus it help to prevent the porcelain from chipping by drilling the hole in increments. If you do not have a uni-bit...I recommend using several different sized drill bits so as to step up to your desired size. If...
