    Help! My Butts are too small.

    Hey Chris, I did a 2.8lb butt the other week thinking it would take 1.5 hours per pound.....total cook of approx 4.5-5 hours. Wrong. Ended up taking almost 8 hours at 225 degrees. The 1.5-2 hour per pound rule doesn't apply for smaller butts.....so go ahead and start them at 1AM and cook...

    Thanks for the feedback. No I never foil....just always assumed the meat would come out with the "steamed" feel and a little on the mushy side. Could be wrong on that though. I'll play around with the time and temp and see how it goes. Sounds like I either need to bump up the cook time or...

    Been doing ribs all year (got the WSM for xmas) and can't seem to get a real good pull back on the bones. They pull back slightly but nothing like I've seen on this website or in some of the better bbq joints. I cook for 4-5 hours each time at a temp of around 225-235. Is it the temp/time...

    Mold on wood?

    Had a bunch of damp apple wood chunks that I had left in a plastic bag, and seems about half of them now have a white mold on them. I can wash the mold off pretty easily but didn't know if it was ok to still use this wood. Will any remaining mold just cook off as the wood burns? Thanks! Pat

    Chris, This sounds really interesting. What kind of smoke wood did you use? I'm guessing it needs to be a pretty mild wood. Also I'm assuming you kept it around 225 degrees? LOVE beets and am always looking for ways to work them into a meal so I might give this a whirl sometime soon...
