    Kebab skewers

MarkG, what you want is something like BR Cameron and Bruno mentioned, the Steve Raichlen kebob rack. Here it is on Amazon UK: https://amzn.to/2L3Dy7c Here's another alternative on Amazon: https://amzn.to/2xKR5gW Plan on cooking with your Spirit lid open, burners on high, and turning often.

    gas go anywhere griddle question

Hello, Katie N - welcome to TVWBB! It's a gas safety issue. The question is: If the two griddles create a significant enough ventilation restriction on the Q. Could that condition, in a worst case scenario (high winds, for example, where the flame is blown out), potentially create a...

    Kettle Pizza

ChuckO, man-o-man that is a post to sticky as a fundamental Weber grilling technique. I must try this!

    Gas go anywhere bbq

BobJ, I can't say the quality has gone down for the Go Anywhere Gas, it's just that Weber moved away from using a flavorizer bar (part number 9201) to cover the burner and replaced the plated steel wire cooking grate (part number 80631) with a porcelain enameled cooking grate, which is a pain to...

    Birthday Brisket and Sausage

Happy birthday, Dustin! Great brisket and homemade sausage cook. I love the special cookies and cake - your family loves your food and they reciprocate in kind. Love it.

    Two quick Week Day Cooks

Two very hearty cooks - I love it. The baked chili reminds me of my wife's mince and dough balls ("tatties, mince, and dough balls") dish. She might like this variation! Mince = ground meat.

    Lid off?

I do a combo. For reverse sear, I'll have the meat indirect with the lid on, then take the lid off and place the meat over the coals for the sear.

First T-bone in at Least Ten Years

That's an awesome "triad" cook. My better half wants a good steak and potatoes dinner - I think this fits the bill for her. Thanks for the inspiration!

Fifty Six Years Later a Chicago Dog

    CharQ Tryout

Jon, nice cook and I look forward to your future cooks on this grill. I just picked up a Char-Q this past weekend from a gentleman that only used it three times. The Char-Q was part of his RV kit and he didn't use the grill much. The grill is in practically new condition and for $80, I couldn't...

Thanks, Michael C. Cheap, quality cooks on a $30 cooker. (I love the Weber Smokey Joes!)

Spatchcock Chicken on the Smokey Joe Silver

I forgot to mention that the seasoning was Goya Mojo Criollo Marinade, marinated for 24 hours. No pat dry.

Spatchcock Chicken on the Smokey Joe Silver

I sometimes use my Smokey Joes as dedicated spatchcock chicken cookers. The idea came to me after making a mini WSM (following the thread on this site) a few years ago (2014?) and I was trying to figure out what to do with the metal perforated tamale pot insert. Why not use it as a heat...

    For spam lover

Lynn Dollar, great insight into POWs in Europe during WWII. The Greatest Generation sacrificed so much. My grandfather was a Marine Raider in the Pacific Campaign and my father told me my grandfather didn't talk much about his experiences. My father did relate one conversation he overheard...
