    Proper Set Up of WSM

    I set mine up exactly as Chris stated above, however, if the wind is coming from the direction of the lid vent I will rotate the lid around to keep the lid vent out of the direct wind.

    Hot water, a green scrubby pad and spray them with bleach, almost like new.

    If you get to Huntsville, AL you almost owe it to yourself to head a little west and got to Decatur, AL and visit the original Big Bob Gibson BBQ restaurant. Chris Lilly is the Pit Master there. If I'm not mistaken there is an exit off of I65 for Dectaur, if not just map it on your phone or GPS...

    Pork butt fat side up or down?

    I always trim off the fat cap on pork butts. There is plenty of internal fat to keep it moist and it gives you more edible bark on the meat itself.

    I put handles on my WSM years ago when I first got it....I used them once. IMHO, one of the least used, unnecessary mods you could do.
