    I'm starting to notice one of the most annoying things about competing is all the work involved in trying to kill the temp and get my pit's cool so I can load them up in the back of the truck and cut out. Anyone have any tips, tricks for this? I'm using a 22.5" WSM and a UDS right now...

    I didn't read all the responses but the reason why you didn't get a good bark is because you put water in the water pan. Try doing it without water in the pan, if your trying to keep it moist use a spray bottle with your favorite liquid and inject it prior to putting it on the Q

    How to drop temp on 22.5 WSM...

    Ok so today was a successful temp controlled cook! Although my brand new PartyQ doesn't work... I think the trick was less lit coals, I only did maybe half a stoker of lit and filled the ring. I cut all the vents closed at 200 and it held strong at 200-205 for a good 30 minutes so I tested...
