    Iv'e smoked several turkey's now breast side up. I'm just curious if it makes a difference.

    Well, I smoked my first two butts and first over night cook. It all turned out great with the exception of the smokey flavor. I used wood chips, instead of chunks. I know that's why it did not have much of a smokey flavor. Where can I buy wood chunks? Should I just order it on line?

    I used Keri's apple juice brine for a start. I stuffed it with an orange, onion, and fresh rosemary. My average temp was about 300 degrees. I cooked it about 3 1/2 hours, and let it rest for about an hour. The leg and thighs fell of the bone. It was so YUMMY!!!
