Time to start planning for WSM Smoke Day 11

Just fired up my 18 WSM and put in 2 shoulders for a party tomorrow. I have a picture of them pre, but will save for a pre/ post shot. Also have 6 racks of ribd to throw in there around 10:30am when the shoulders come off. So excited!!! #WSMSmokeday11. My first WSM smoke day and happy to be...

Epic FAIL using Minion method. What happened??

Well, I do get some smoke leaking from where the bottom and the middle sections meet. Also get a LOT of leaking around the door. I actually just ordered a LavaLock gasket kit today to try and seal the lower section and also the door. Im pretty sure it will make a big difference. I hope it will...

Epic FAIL using Minion method. What happened??

Well, so I have actually learned a lot from this. And thanks to all! I appreciate all the positive feedback that it wasn't an actual FAIL, but an actual successful cook. For all this postive feedback, Ill add some food ****!! Haha. I did actually take pics of the process. Ill add them. I cant...

Epic FAIL using Minion method. What happened??

Thanks for the help guys! I knew you would have some solutions to try and tips for next time. As I said, the meat actually turned out great. I don't feel it was a failure of a cook, but just an absolute failure of the Minion method itself. I definitely did not want a fully lit ring of charcoal...

Epic FAIL using Minion method. What happened??

Hey everyone, So, on my 3rd ever cook on my 18.5, I decided to try for making buckboard bacon. I cured the meat as directed, and everything seemed fine. The meat was not the issue here. FYI it was about a 4lb. chunk of pork loin, and about a 7lb. Shoulder. Both placed on top rack, with ample...

    3rd cook on WSM....Baby backs!

So, I bought a used WSM a few months ago off CL. I have cooked a couple turkeys around Thanksgiving and one other small cook. I had to do some ribs!! Today, I went to Costco, bought a large pack of baby backs, and got home and started prepping. It seemed as if there was no membrane on the...

For people whom bought their WSM used.. How much did you pay?

Got an 18.5" WSM used, pre 2009 I think, for 175. They never make it on CL around this area, and sure beats the retail of 300. It looked brand new, and was only used a handful of times. Never seen one for cheaper around here. California is expensive!!

    Throwdown #24: Turkey

Ill join :) I made this turkey for Turkey Day 2014. Cooked it on my WSM 18.5. It was my first EVER cook on the rig. I bought it used on CraigsList, and was very intimidated. I did a practice run for the big day about 2 weeks earlier on my Spirit 310. I was fully planning on using that to cook...

    Beef Jerky

Nice looking stuff! Is it done on a WSM? And, also is it smoked? Or just held at that temp to dehydrate. Sorry for the ????s but I have never made it before but love me some jerky!

First time using my 18, cooked a turkey on Turkey Day!

Well, I recently bought a 18.5" WSM from Craigslist. Got a great deal from a local guy that used to be on these boards. The WSM was in great condition. Bought it 4 days before Turkey Day. I was very hesitant about using it for a turkey on the big day. And for the first time ever using it?? Well...

Scored a used 18.5. Getting started with it....

Yeah, pretty much what I was thinking. I was trying to all week to buy the 18.5 so I would have time to do a practice run on it. But, I couldnt get it until Sunday. And I work today and tomorrow, and wont be back home until Thursday morning. So, a practice run would be the real thing. I just...
